Losing a hero, gaining 7 more!

My family buried our hero on Saturday. My grandpa, Larry Goats, passed away peacefully in his home surrounded by 8 of his 10 children. Grandpa Goats was a special man who impacted my life and the life of our very large family. His 7 daughters took diligent care of him over the last 3 years of his life. They showed extravagant love by each taking a day of the week to meet his every need.
My Uncle Steve shared a beautiful story at the funeral when he stated that his sisters were his heroes due to the self-sacrificing care that they gave to my grandpa during this past year while he was on hospice. Grandpa Goats leaves a legacy of love and as each of my aunts expressed, we should share that love with the world around us.

Strawberry Cake Recipe

My Aunt Omerine makes a wonderful strawberry cake. I made it for my friend, Donna's birthday and everyone enjoyed it.

Strawberry Cake

1 box Duncan Hines white cake mix 1/2 cup water
4 eggs 1 box small strawberry jello
3/4 cup cooking oil 1 cup frozen strawberries in juice (thawed)
1 tsp baking powder

Mix all ingredients in order in large bowl. Bake in oblong greased and floured pyrex dish. Bake at 350 degrees for 20 minutes. Let cool before icing.

Icing:
1 box powdered sugar 1 stick butter, softened
1 cup frozen strawberries in juice (thawed)

Mix ingredients together and smooth on cooled cake.

Chicken Wisdom

A few lessons from my chickens:

1. They have no preference about being fed scraps vs. scratch. Lesson: leftovers are just as satisfying!
2. They don't worry about being put up hungry, someone usually remembers to feed them around 5pm. Lesson: things get better around 5pm.
3. They lay the most beautiful eggs, blue-green Auracauna eggs, about every 26 hours. Lesson: Share the work, ask for help. (My chickens do not lay an egg a day, they lay about every other day.)
